Growing up, I loved the simple cakes my grandmother made. And as designer cakes started popping up all over Instagram, I fell in love with their aesthetic, but wasn't a fan of their way-too-sweet frosting and fondant.
I thought to myself, how can I combine the nostalgic taste of Grandma's cakes with the elegance of a boutique? So I started combining the techniques of refined pastry with recipes from the grandmas of the world to create cakes that look great and taste delicious. My growing menu includes flavours all the way from Canada to Japan, from a classic white cake to a hojicha chiffon. Each cake bears the name of an important woman from the country that inspired it, celebrating the ingenuity that created the food traditions of the world.
I put all my love into these cakes, making them fresh to order using a mix of traditional and modern techniques. They feature 100% edible decorations, less-sweet frostings, and quality ingredients that support local farmers. It may take a little more effort, a lot more time, and a higher cost in ingredients, but I think it's totally worth it to make cakes that taste as good as they look.
